Shavuot Cheese Cake – All-time favorite with a special story.

Growing up, my best friend was Meirav.
We were inseparable. Meirav’s mom used to make the most delicious cheese cake on the planet. Really.
Every time I was at her house I wanted a piece of that magical cheese cake, and many a times to embarrass to ask. Until when I was about 14 I think I dared asking for the recipe… till today it is my most favorite cake in the world!

For the dough, mix together:

100 gr. Unsalted butter

½ cup sugar

1 egg

1 ½ cups plain flour

** Press the dough to base a 26cm baking pan

For the mixture, mix together:

500 gr Israeli white 9% cheese (if you can’t find it you can use sour cream or Greek Yogurt instead)

3 eggs

¾ cups sugar

1 pack vanilla sugar

**Pour cheese mixture over the dough. Bake in medium heat until golden. About 40 min.

15 minutes before the end, prep the frosting:

400 gr. Sour cream

1/3 cup sugar

1 tbsp vanilla essence

**Spread onto the cake and bake for 15 minutes.

Cool down, and chill in the fridge for 8 hours before serving.
