My Mother's Potato & Tomato Salad

We all have those dishes that when we take a bite, it immediately reminds us of home. This is that recipe for me. Every Jewish mother has her staple recipes, and this is my mother’s!

When Pesach approaches it is a potato festival in my parent’s home. All the Chametz is out and in come the potatoes – during Pesach they are in their fullest glory!

I actually didn’t like this recipe as child, probably because of all the parsley and garlic. But today, there’s is no chance of me coming to my parent’s house during Pesach without a big fresh bowl of this wonderful Israeli style salad waiting with my name on it.

Not only is it bursting with potatoes but also Israeli tomatoes, one of my favorite Israeli things. They are so so delicious (I bet you can find similar ones at your local farmer’s market!).

If you’re looking for an easy, delicious and Israeli inspired recipe this Pesach (or all year-round!), this salad is for you.

You’ll need

5 medium sized potatoes
4 medium sized tomatoes
1/2 cup of fresh chopped parsley
4 green onions
Freshly squeezed lemon juice from 2 medium lemons
1/4 cup olive oil
1 1/2 tbs salt
2 Garlic cloves
1/2 tsp freshly ground black pepper

Here’s How

  1. Boil and cook the potatoes until softened
  2. Peel and dice into medium sized cubes
  3. Dice the tomatoes into same sized cubes
  4. Chop the parsley thinly together with the onion and garlic
  5. Season with olive oil, salt & pepper
  6. Mix together
  7. Can be kept in the fridge for a few days

This salad is perfect for a family picnic or on the lunch or dinner table all-year long.
