Delicious Apple Crumble Dessert for Rosh Hashana

Here in Israel, Rosh Hashana is 2 nights and 2 days, but sometimes it feels like there are a million meals. We get together with family and friends to celebrate the new year and eat sweets non-stop. Whether it’s appetizers with honey, main dishes with silan (date honey) or an endless number of desserts, the name of the game during Rosh Hashana is sweet.

Every year I try to add a bit of variety to our holiday meals. I try new desserts, add sweets to the table, and more. But there is one recipe that I always find myself coming back to… this apple crumble.

I love the idea of making a Rosh Hashana dessert that includes apples. Here in Israel, we don’t have much apple picking, but if you do in your part of the world in the fall, this is a great recipe to use up some of the apples you’ve picked! I love serving this dish after our meal or even just as a snack while the kids are home over Rosh Hashana vacation.

It’s delicious, symbolic, and easy to make. Is there anything better for a holiday dessert?

8*10 inch dish (or similar)

Ingredients:
Crumb base
½ cup sugar
80 gr. cold butter, cut into cubes
½ cup + 3 tbsp. flour
1/8 tsp salt

Apples
5-6 (approx. 2 pounds) Granny Smith apples
20 gr. Butter
3 tbsp. white or brown sugar
Optional: 1 tbsp. lemon juice or 1 tsp. grated lemon grind

Directions:

  1. Base: Put the sugar and butter in a bowl. Smush the sugar and butter together with a closed fist until the sugar sticks to the butter and it turns into one lump.
  2. Add the flour and the salt. Using your fingers smush, crush and crumble the ingredients until you have medium sizes crumbs. Transfer to a bag or to a dish, close, and put in the fridge or freezer for at least an hour.
  3. Apples: Peel the apples, cut into quarters, and remove any seeds. Cut into strips about half an inch wide.
  4. Warm up a pan on a medium-high flame. Melt the butter, add the apples, and cook while mixing for 5 minutes. Add the sugar and if desired the lemon juice or peel. Mix and cook for another 2-3 minutes, until the apples release a bit of liquid. Reduce the flame and cook for 6-7 minutes until the apples are soft but maintain their shape and the liquid has dissolved a bit. Remove from the stove and let rest for 10 minutes.
  5. Heat the oven to 390 degrees Fahrenheit and coat the pan with butter.
  6. Add the apples to the pan, close to one another. Sprinkle the crumbs on top. Bake for approximately 20 minutes until the crumbs are hard and gold. Remove and let cool a bit. Serve warm or at room temperature. Enjoy!
